When We Were Sisters
Cecilia eats vegan and finding a good muffin recipe without eggs and milk is a challenge. This version, which is mentioned in the book, is based almost entirely on one from Minimalist Baker, a food blog.
The recipe calls for one flax egg. Most likely you won’t have these hanging around. To make one flax egg combine 1 Tablespoon of flaxseed meal (grind whole flax seeds in a coffee or spice mill just before using) and 2 1/2 Tablespoons of water. Let sit for about 5 minutes and use in place of an egg.
