Surely half the fun of a morning’s challenging ride is the breakfast sometimes served afterwards. The following recipe serves 10, but it can be easily expanded times four to serve as many as 50 guests when baked in 2 12x20” pans. The sausage is optional, particularly if eaten with Virginia’s famous ham biscuits—see Cissy’s biscuit recipe under Wedding Ring.
Hunt Breakfast Casserole
½ lb of sharp Cheddar Cheese, shredded
1 lb cooked, crumbled bulk sausage
1 tsp dry mustard
1 tsp paprika
2 cups sour cream
10 eggs
Preheat oven to 325 degrees
Generously butter a 9X13” pan and line with shredded cheese and sausage.
In a small bowl mix sour cream and spices and set aside.
In a large bowl—very large if you quadruple this recipe—beat eggs until light and fluffy. Add sour cream with spices and any cheese and sausage that remains.
Bake until eggs are set and not runny for 30-60 minutes (depends on thickness of layers).
