After being a dutiful wife and mother to a man with secrets, the newly divorced Faith Bronson is starting over in Georgetown. As she tries to find her footing and continue to parent two middle-school children, the family eats simple meals and takeout.
However, one meal shines brightly for Faith. When she joins Pavel, a new man in her life, for a night at his West Virginia retreat, the housekeeper makes a dish so fabulous that Faith is determined to get the recipe. So here it is, Faith. Thanks for asking.
Lolly’s Curried Fruit Compote
(Serves 10-12)
Preheat oven to 350 degrees.
Butter a 2 quart baking dish.
In baking dish gently combine four 8 ounce cans (approximate weight) of a variety of sliced or halved fruit packed in juice or light syrup and drained. Choices could include: pears, apricots, peaches, apples, grapefruit, etc.
Add 1 ½ cups of sliced banana.
Add one 17 ounce jar of pitted dark cherries.
In a small bowl, combine 2 tablespoons of cornstarch, 1 tablespoon of curry powder, 1 tablespoon of cinnamon and 1 cup of brown sugar. Sprinkle over the fruit.
Combine 1 stick melted butter and 1/4 cup of brandy (sherry can be substituted) and pour this over the fruit, too. Toss carefully to coat.
Bake at 350 degrees for approximately 30 minutes. Serve warm. Vanilla or chocolate chip ice cream is an excellent accompaniment. Or Greek yogurt lightly drizzled with maple syrup or honey.
